To prepare a simple matcha tea base for everyday enjoyment, sift the matcha into a bowl to remove any clumps. Add a small amount of hot water and whisk until the matcha is fully dissolved and smooth.
This base creates a balanced, concentrated matcha that can be enjoyed on its own or used as the foundation for other preparations. Adjust the amount of water slightly to suit your preferred strength.
To make koicha, use a higher concentration of the prepared base with minimal additional water. Stir slowly rather than whisking vigorously so the matcha remains thick, smooth, and concentrated.
Koicha should have a dense, rich texture with little to no foam. Adjust the amount of added water slightly if needed, keeping the consistency thick and full-bodied.
With the base ready, add additional hot water to reach your preferred strength and stir or whisk briefly to combine.
For a cold version, pour the tea base over a glass of ice. Adjust the amount of added water depending on how light or strong you prefer the tea.
Add your preferred amount of milk and ice into a cup. Then pour your tea base over the ice to create a perfect creamy, layered matcha latte. Naturally sweetened with Somei-Yoshino Matcha's flavor, this latte needs no extra sugar! Mix well before drinking.
1. Why is your matcha not officially graded? Matcha sold outside of Japan is divided into an informal grading system. This grading system is a ploy that was developed for marketing purposes in the West and is instilled without moderation. Companies are able to assign a "grade" to their matcha without having any proper testing or checking on the accuracy of such quality levels. As a Japanese company, we do not want to assign obscure grades to our products as this is not a concept here.
2. How do we know the quality of your matcha then? We are providing the best matcha we can to our customers straight from its country of origin. Our matcha is high value and versatile, making it great to drink by itself or as an ingredient for a tasty treat. The matcha we provide a level in which it can be served at traditional tea ceremonies in Japan and abroad. We can confidently state that our matcha is authentic, high quality, and filled with tradition.
3. How should we store our matcha? In general, humidity is matcha's worst enemy. however, no matter what climate you live in, we recommend that you store your matcha away from light and sealed firmly in a cool environment. Placing it in the refrigerator would maximize freshness.
4. What is your policy on "best by" dates? While it heavily depends, there will always be at least 3 months before the best by date. Upon opening, we do recommend that you consume all the contents within 1-2 months for the best quality.
5. The serving sizes are too small, what should I do? Japanese palates often prefer 1 gram of matcha per cup, so this is what we used as our guideline. However, the beauty of matcha is that this can be altered to the level of your choosing. If you prefer a stronger or weaker taste, you can freely adjust the matcha and water ratios until you find a balance that suits you
6. Is matcha a gluten-free product? Yes, Somei-Yoshino Matcha is a gluten-free product.
